Chicken Rice Soup

A heartwarming bowl of Chicken Rice Soup, filled with tender chicken, vibrant veggies, and fluffy rice, perfect for chilly nights.

  • 1 whole Bone-in Chicken
  • 1 cup Rice (Jasmine or Basmati)
  • 2 medium Carrots, chopped
  • 2 stalks Celery, chopped
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • Fresh herbs (parsley, thyme, or dill)
  • Salt and Pepper, to taste
  • 8 cups Water or Chicken Broth

Instructions

  1. Prepare the Chicken: Rinse under cold water and pat dry.
  2. Sauté the Aromatics: Heat olive oil, add onions and garlic, and stir until translucent.
  3. Add Your Veggies: Mix in carrots and celery, sauté for 5 minutes.
  4. Add the Chicken: Nestle chicken in the pot, pour in water or broth.
  5. Season and Simmer: Add salt, pepper, and herbs, bring to a boil and simmer for 40-50 minutes.
  6. Cook the Rice: Prepare rice separately as per package instructions.
  7. Shred and Strain: Remove chicken, shred the meat, and discard skin and bones.
  8. Combine it All: Return chicken to the pot, add rice, and adjust seasoning.
  9. Serve Hot: Ladle soup into bowls, garnish with herbs.
  10. Enjoy with Love: Pair with crusty bread or rolls.

Notes

Store leftovers in an airtight container for up to 3 months. The soup tastes even better the next day.
