Homemade Peach Cobbler Muffins

Delightful muffins capturing the essence of summer, packed with juicy peaches and a crunchy streusel topping.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups fresh or canned peaches, diced
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup brown sugar (for streusel)
  • 1/4 cup flour (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. Mix together the flour, sugar, baking powder, salt, and cinnamon in a large bowl.
  3. Combine eggs, milk, vanilla, and melted butter in a separate bowl.
  4. Bring the wet ingredients into the dry ingredients and fold until just combined, then add peaches.
  5. Make the streusel by mixing brown sugar, flour, and melted butter until crumbly.
  6. Fill muffin cups 2/3 full with batter and top with streusel.
  7. Bake for 18-20 minutes until a toothpick comes out clean.
  8. Cool for 5 minutes before transferring to a wire rack.

Notes

Great served warm with whipped cream or ice cream. Experiment with different fruit variations.
