Pumpkin Pie Cupcakes

  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 3 tablespoons granulated sugar (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 8 ounces cream cheese, softened (for frosting)
  • 1/4 cup unsalted butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a standard muffin tin with cupcake liners.
  2. Mix the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves in a large bowl.
  3. Whisk together the eggs, brown sugar, and granulated sugar in another bowl until smooth. Mix in the pumpkin puree, vegetable oil, milk, and vanilla extract.
  4. Fold the wet ingredients into the dry mix gently to avoid overmixing.
  5. Fill each cupcake liner about 2/3 full with the batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire rack.
  7. Beat together the softened cream cheese, butter, powdered sugar, and vanilla extract to make the frosting.
  8. Frost the cooled cupcakes using a piping bag or butter knife.
  9. Serve these delightful cupcakes at your next gathering or enjoy them all yourself.

Notes

Store leftover cupcakes in an airtight container in the fridge for up to five days. They can also be frozen for up to three months.
