  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/4 cup sugar (for rolling)
  • 1 teaspoon cinnamon (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
  3. Cream the softened butter, granulated sugar, and brown sugar until creamy and light.
  4. Add the egg and vanilla extract, and mix until well combined.
  5. Incorporate pumpkin puree into the wet mixture.
  6. Combine the wet and dry ingredients, mixing until just combined.
  7. Chill the dough in the refrigerator for about 30 minutes (optional).
  8. Prepare the sugar coating by mixing granulated sugar and cinnamon together.
  9. Shape the dough into balls and roll in the sugar-cinnamon mix.
  10. Bake for 10-12 minutes or until the edges are golden.

Notes

For added flavor, fold in chocolate chips, nuts, or drizzle with caramel.
