  • 1/4 cup granulated sugar (50 grams)
  • 1 teaspoon cinnamon
  • 1/4 cup unsalted butter (56 grams, melted)
  • 1 1/2 cups all-purpose flour (187.5 grams)
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil (80 ml)
  • 1/2 cup brown sugar (100 grams, packed)
  • 1/4 cup granulated sugar (50 grams)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup sour cream (60 ml)
  • 1 cup pure pumpkin (240 ml)
  • 1/2 cup powdered sugar (55 grams)
  • 12 tablespoons cream (or milk)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin.
  2. Combine the streusel ingredients until it resembles coarse crumbs.
  3. Whisk together the dry ingredients in a large bowl.
  4. Mix the wet ingredients in another bowl until smooth.
  5. Pour the wet mixture into the dry ingredients and fold gently.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Sprinkle the streusel topping over each muffin.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Cool in the tin for 5 minutes then drizzle with glaze once cooled.

Notes

These muffins are best served warm and pair wonderfully with coffee or tea. Feel free to add chocolate chips or nuts for a twist!
