Strawberry Earthquake Cake

A vibrant twist on the classic cake, packed with juicy strawberries and a velvety cream cheese filling that creates a stunning ‘earthquake’ effect as it bakes.

  • 1 box strawberry cake mix
  • 1 cup water
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup shredded coconut
  • 1/2 cup chopped nuts (walnuts, pecans, or almonds)
  • Whipped cream for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the cake batter by combining the strawberry cake mix, water, vegetable oil, and eggs until just blended.
  3. Fold in the chopped fresh strawberries.
  4. Create the filling by beating together the softened cream cheese and powdered sugar until smooth and creamy.
  5. Layer half of the cake batter into a greased 9×13-inch baking pan, then top with cream cheese filling.
  6. Pour the remaining cake batter over the cream cheese layer.
  7. Add shredded coconut and chopped nuts over the top of the uncooked cake.
  8. Bake for 30-35 minutes or until a toothpick inserted comes out clean.
  9. Cool for 10 minutes then transfer to a wire rack to cool completely.
  10. Serve with whipped cream and enjoy!

Notes

For a healthier twist, you can use sugar-free cake mix or substitute melted coconut oil for vegetable oil.
