Easy Strawberry Poke Cake

A delightful dessert that’s moist, bursting with strawberry flavor, and perfect for any occasion.

  • 1 package white cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs (or 4 egg whites)
  • 1 package Strawberry Jello
  • 1 cup boiling water
  • 8 oz whipped topping
  • 12 strawberries (cut in half)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish. In a mixing bowl, combine the white cake mix, vegetable oil, and eggs. Follow instructions on cake mix box, adding appropriate water. Mix until just combined.
  2. Pour the batter into the prepared baking dish and place it in the preheated oven. Bake according to package instructions (about 28-32 minutes) or until a toothpick comes out clean. Let it cool for 15 minutes.
  3. Poke holes in the top of the cake with a skewer or wooden spoon handle, about an inch apart.
  4. Prepare the Strawberry Jello by adding 1 cup of boiling water to the powder. Stir until fully dissolved.
  5. Pour the dissolved jello over the cooled cake, ensuring it seeps into the holes. Let it sit for 10 minutes.
  6. Chill the cake covered in plastic wrap in the refrigerator for at least 2 hours. Spread the whipped topping over the cake and top with halved strawberries.

Notes

For best results, refrigerate overnight. Use ripe strawberries for the best flavor.
