  • 3/4 cup Granulated Sugar
  • 2 teaspoons Lemon Juice
  • 4 tablespoons Cornstarch
  • 1/4 teaspoon Almond Extract
  • Large pinch Kosher Salt
  • 12 oz Cream Cheese, room temperature
  • 1/2 cup Confectioners’ Sugar
  • 1 Large Egg
  • 1.5 cups All-Purpose Flour
  • 1.5 cups Whole Wheat Pastry Flour
  • 1 cup Granulated Sugar
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt
  • 1 cup Unsalted Butter, cut into small cubes
  • 1 Large Egg, whisked slightly
  • 1/2 cup Sliced Almonds (optional)

Instructions

  1. Prepare the Cherries: Combine tart cherries, granulated sugar, lemon juice, cornstarch, almond extract, and a pinch of salt in a saucepan over medium heat. Stir until bubbling, about 5-7 minutes. Remove from heat to cool.
  2. Preheat the Oven: Preheat to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  3. Make the Crust and Topping: Whisk together all-purpose flour, whole wheat pastry flour, granulated sugar, baking powder, and salt. Mix in cold butter until crumbly. Incorporate whisked egg and reserve 1.5 cups for topping.
  4. Assemble the Crust: Press the mixture into the dish. Bake for 15 minutes until golden.
  5. Make the Cream Cheese Filling: Beat cream cheese and confectioners’ sugar until smooth. Add the egg and mix until combined. Spread over cooled crust.
  6. Add the Cherry Topping: Spoon the cherry filling over cream cheese layer, then sprinkle with reserved crumb and sliced almonds.
  7. Bake and Chill: Bake for 30-35 minutes until topping is golden and filling is set. Cool to room temperature, then refrigerate for 2 hours before slicing.

Notes
