12 oz Cream Cheese, room temperature
1/2 cup Confectioners’ Sugar
1 Large Egg
1.5 cups All-Purpose Flour
1.5 cups Whole Wheat Pastry Flour
1 cup Granulated Sugar
1 teaspoon Baking Powder
1/4 teaspoon Salt
1 cup Unsalted Butter, cut into small cubes
1 Large Egg, whisked slightly
1/2 cup Sliced Almonds (optional)
Instructions
Prepare the Cherries: Combine tart cherries, granulated sugar, lemon juice, cornstarch, almond extract, and a pinch of salt in a saucepan over medium heat. Stir until bubbling, about 5-7 minutes. Remove from heat to cool.
Preheat the Oven: Preheat to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
Make the Crust and Topping: Whisk together all-purpose flour, whole wheat pastry flour, granulated sugar, baking powder, and salt. Mix in cold butter until crumbly. Incorporate whisked egg and reserve 1.5 cups for topping.
Assemble the Crust: Press the mixture into the dish. Bake for 15 minutes until golden.
Make the Cream Cheese Filling: Beat cream cheese and confectioners’ sugar until smooth. Add the egg and mix until combined. Spread over cooled crust.
Add the Cherry Topping: Spoon the cherry filling over cream cheese layer, then sprinkle with reserved crumb and sliced almonds.
Bake and Chill: Bake for 30-35 minutes until topping is golden and filling is set. Cool to room temperature, then refrigerate for 2 hours before slicing.
