The Ultimate Tomato Pie

A nostalgic tomato pie recipe that celebrates summer with fresh tomatoes and a creamy, cheesy filling.

  • 1 Pie Crust
  • 4 Beefsteak Tomatoes
  • Salt and Pepper (to taste)
  • 1 tbsp Fresh Basil (or 1 tsp Dried Basil)
  • 2 tbsp Chopped Chives
  • 1 cup Heavy Mayo (preferably Duke’s)
  • 1 cup Grated Cheddar Cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your pie crust and pre-bake for about 10 minutes until lightly golden.
  3. Slice the tomatoes into thin, even slices and lay them out to absorb excess moisture.
  4. Season the sliced tomatoes with salt and pepper and let them sit for 10-15 minutes.
  5. Mix together the heavy mayo, grated cheddar cheese, fresh basil, and chopped chives until smooth.
  6. Assemble the pie by layering the tomatoes in the pre-baked crust and pouring the cheese mixture on top.
  7. Bake for 30-35 minutes until golden brown and bubbly.
  8. Cool for at least 10 minutes before slicing.
