Simple Tuna Garbanzo Bean Salad

A vibrant, quick salad packed with protein and nutrients, perfect for warm days or busy weeknights.

Ingredients

  • 1 can of tuna, drained
  • 1 can of garbanzo beans, rinsed and drained
  • 1/2 red onion, diced
  • 1 bell pepper, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Prep your workspace by washing your vegetables.
  2. Drain the tuna and rinse the garbanzo beans.
  3. Chop the red onion and bell pepper into bite-sized pieces.
  4. Mix the drained tuna and garbanzo beans in a bowl, folding in the diced vegetables.
  5. Dress the salad with olive oil, lemon juice, salt, and pepper, then toss.
  6. Taste the salad and adjust seasoning as needed.
  7. Chill the salad in the fridge for 20-30 minutes for better flavor (optional).

Notes

Add feta cheese or serve on a bed of mixed greens for an extra layer of freshness.
