White Chicken Chili

A cozy bowl of comfort featuring tender chicken and creamy white beans, perfect for chilly evenings.

  • 1 pound boneless, skinless chicken breast or thighs
  • 2 cans (15 ounces each) white beans (great northern or cannellini)
  • 1 can (4 ounces) diced green chiles
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon oregano
  • Salt and pepper to taste
  • Optional toppings: fresh cilantro, lime wedges, avocado slices, shredded cheese, or sour cream

Instructions

  1. Prep your chicken by dicing it into bite-sized pieces or shredding if using rotisserie chicken.
  2. Sauté the onions in a large pot with 1 tablespoon of olive oil over medium heat until translucent, about 3-5 minutes, then add minced garlic and stir for another minute.
  3. Cook the chicken in the pot with a sprinkle of salt and pepper until no longer pink, about 6-7 minutes.
  4. Add the white beans and green chiles, mixing to combine.
  5. Pour in the chicken broth and bring to a gentle boil, then reduce to a simmer for about 20 minutes.
  6. Season to taste with cumin, chili powder, oregano, salt, and pepper.
  7. Thicken the chili by mashing some beans and stirring them back in if desired.
  8. Serve the chili in warm bowls with your choice of toppings.

Notes

This chili can be frozen for up to 3 months. Reheat on the stovetop after thawing overnight in the fridge.
