Moist Pumpkin Bread

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup maple syrup
  • 4 large eggs
  • 1/2 cup chopped nuts (optional)
  • Streusel Topping: 1/2 cup flour, 1/2 cup brown sugar, 1 teaspoon pumpkin pie spice, 1/4 cup cold butter
  • Maple Glaze: 1 cup powdered sugar, 2-3 tablespoons maple syrup, 1-2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5 inch loaf pan by greasing and flouring it.
  3. Mix the dry ingredients: whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice in a large bowl.
  4. Blend the sugars and wet ingredients: in another bowl, combine the granulated sugar, brown sugar, pumpkin puree, vegetable oil, maple syrup, and eggs.
  5. Combine the wet and dry ingredients by gradually adding the dry mix to the wet mix, stirring until just combined.
  6. Incorporate the chopped nuts if desired.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Prepare the streusel topping by combining the flour, brown sugar, and pumpkin pie spice, then mixing in the cold butter until crumbly.
  9. Sprinkle the streusel topping over the batter.
  10. Bake for 60-70 minutes, or until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes before transferring to a wire rack.
  12. Whisk together the glaze ingredients until desired consistency is reached, then drizzle over the cooled bread.
