Tarte aux Fraises

A delightful French dessert featuring a crisp pastry crust filled with luscious vanilla pastry cream and topped with fresh strawberries.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg yolk
  • 1/4 teaspoon salt
  • 1 cup vanilla pastry cream
  • 2 cups fresh strawberries, hulled and halved
  • 2 tablespoons apricot glaze (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the all-purpose flour, powdered sugar, and salt in a bowl.
  3. Add the softened butter and work it into the flour mixture until it resembles coarse crumbs.
  4. Make a well in the center and add the egg yolk; mix lightly until the dough starts to come together.
  5. Chill the dough wrapped in plastic wrap for at least 30 minutes.
  6. Roll out the chilled dough and transfer it to a tart pan.
  7. Blind bake the crust for about 15 minutes, then remove weights and bake for an additional 5-10 minutes.
  8. In a saucepan, combine milk, sugar, and cornstarch; cook until thickened.
  9. Whisk egg yolks; temper with hot milk mixture, then combine all and cook until thickened.
  10. Spread the cooled pastry cream over the tart crust.
  11. Arrange the strawberries on top of the cream.
  12. Brush with warm apricot glaze if using.
  13. Refrigerate for at least 1 hour to set.
  14. Slice and serve with whipped cream if desired.
