Apple Crisp Mini Cheesecakes

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1/2 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped apples
  • 1/2 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup rolled oats
  • 1/4 cup all-purpose flour

Instructions

  1. Make the crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are completely coated and resemble wet sand.
  2. Prepare the muffin tin: Preheat your oven to 325°F (160°C). Line a muffin tin with cupcake liners or spray it with cooking spray.
  3. Press the crust into the pan: Take about a tablespoon of the crust mixture and press it firmly into the bottom of each muffin cup.
  4. Prepare the cheesecake filling: In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add sugar and continue mixing until fully incorporated.
  5. Add eggs and vanilla: Add the eggs, one at a time, mixing well after each addition. Then mix in the vanilla extract.
  6. Fold in the apples: Gently fold in the chopped apples, making sure they’re evenly distributed throughout the filling.
  7. Fill the muffin tin: Spoon the cheesecake mixture over each crust, filling them about 3/4 full.
  8. Prepare the apple topping: In a small bowl, combine the chopped apples, cinnamon, brown sugar, rolled oats, and flour. Mix until the apples are coated.
  9. Add the topping to the cheesecakes: Sprinkle the apple mixture generously over the cheesecake batter in each muffin cup.
  10. Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes.
  11. Cool and chill: Allow the cheesecakes to cool in the pan for about 15 minutes before transferring them to a wire rack. Once cool, refrigerate for at least 2 hours to set.
