No Bake Carrot Cake Bites

These No Bake Carrot Cake Bites are a perfect blend of classic carrot cake flavors packed into bite-sized treats that are simple to make and delicious to eat.

  • 1 cup grated carrots
  • 1 cup oats
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon

Instructions

  1. Grate those carrots! Peel and grate your carrots using a box grater or food processor to achieve about 1 cup of grated carrots.
  2. Mix the dry ingredients. In a large mixing bowl, combine the grated carrots, oats, almond flour, and cinnamon. Stir until evenly mixed.
  3. Sweeten it up! Drizzle maple syrup into the mix and combine thoroughly with a spatula or hands.
  4. Form the bites by scooping out a tablespoon of the mixture and rolling it into a ball, about the size of a golf ball.
  5. Chill and set. Place the formed bites on a lined baking sheet and refrigerate for at least 30 minutes.
  6. Finish with a roll in shredded coconut, chopped nuts, or a sprinkle of cinnamon before serving.
