Chewy Pumpkin Cookies

These chewy pumpkin cookies capture the essence of fall with their soft, fluffy texture and warm spices, perfect for cozy baking sessions.

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, softened
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons pumpkin spice
  • 1/2 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • Spiced sugar for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a couple of baking sheets with parchment paper.
  3. Beat together the softened butter, brown sugar, and granulated sugar until light and fluffy—about 2-3 minutes. Add in the pumpkin puree, egg, and vanilla extract.
  4. Whisk together the all-purpose flour, baking soda, baking powder, pumpkin spice, and salt in a separate bowl.
  5. Gradually add the dry ingredient mix to the wet ingredients, stirring gently until just combined.
  6. Refrigerate the dough for about 30 minutes if you have the time (optional).
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving space between each cookie.
  8. Sprinkle the spiced sugar on top of each cookie if using.
  9. Bake for 10–12 minutes or until the edges are slightly golden.
  10. Cool cookies on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a gluten-free option, swap all-purpose flour with almond flour or a gluten-free flour blend. These cookies freeze well; store in a freezer-safe bag for up to three months.
