Chocolate Cherry Brownies

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup roasted cherries
  • Extra cherries for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a 9×13-inch baking pan lined with parchment paper.
  3. Melt the unsalted butter over low heat until just melted.
  4. Mix the melted butter and sugar until well combined, then add the eggs one at a time and vanilla.
  5. Combine the flour, cocoa powder, and salt in a separate bowl, then fold into the wet ingredients.
  6. Add the chocolate chips and roasted cherries, folding gently into the batter.
  7. Pour the batter into the prepared baking pan, spreading evenly.
  8. Bake for 30-35 minutes until a toothpick comes out with a few moist crumbs.
  9. Cool brownies for 15-20 minutes before transferring to a wire rack.

Notes

For a richer taste, use Dutch-process cocoa. Add nuts or coconut for variations.
