Maple Pecan Pumpkin Bread

A delightful autumn treat capturing the essence of fall with pumpkin puree, brown sugar, and crunchy pecans.

  • 2 cups pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/4 cup maple syrup
  • 1/2 cup confectioners’ sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan with oil or parchment paper.
  3. Mix the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Blend the wet ingredients: pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and maple syrup until smooth.
  5. Combine the dry and wet mixtures until just combined.
  6. Add the chopped pecans and gently fold them in.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack.
  10. Glaze (optional): whisk together confectioners’ sugar and maple syrup to drizzle over the bread.

Notes

For a vegan version, substitute eggs with flaxseed or chia eggs and use mashed banana or extra pumpkin puree instead of oil.
