  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour a 9×5-inch loaf pan.
  3. Mix your dry ingredients in a large bowl: whisk together the flour, baking soda, spices, and salt until combined.
  4. Combine your wet ingredients in a separate bowl: mix together the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract.
  5. Fold the wet ingredients into the dry ones until just incorporated.
  6. Pour the batter into the prepared loaf pan and spread it evenly.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Notes

You can add walnuts, pecans, or chocolate chips for variation. Store leftovers in an airtight container.
