  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup brown sugar
  • 1/4 cup cold butter
  • 1/4 cup flour for streusel
  • 1 tablespoon cinnamon (for streusel)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing it or lining it with parchment paper.
  3. Mix the dry ingredients: whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg in a medium bowl.
  4. Combine the wet ingredients: beat sugar and vegetable oil in a large bowl, then add pumpkin puree and eggs, mixing until smooth.
  5. Combine wet and dry mixtures by adding the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Fold in nuts, if using.
  7. Prepare the streusel topping by mixing brown sugar, flour, cinnamon, and cold butter in a small bowl until crumbly.
  8. Assemble the loaf by pouring the batter into the prepared pan and sprinkling the streusel on top.
  9. Bake for 60-70 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Add chocolate chips or espresso powder for variations. Store leftovers tightly wrapped at room temperature for 3-4 days or freeze for up to 3 months.
