Roasted Cherry Brownies

Delightful brownies infused with the natural sweetness of roasted cherries, creating a rich and fudgy dessert.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 cup fresh cherries, pitted and halved

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roast the cherries for 15-20 minutes until bubbly and caramelized.
  3. Melt the unsalted butter in a saucepan, then stir in the granulated sugar.
  4. Add the eggs one at a time and stir in the vanilla extract.
  5. Mix together flour, cocoa powder, baking powder, and salt in another bowl.
  6. Fold this dry mixture into the buttery mixture until just combined.
  7. Stir in the chocolate chips.
  8. Incorporate half of the roasted cherries into the batter.
  9. Pour the batter into a greased 8×8 inch baking pan and top with remaining roasted cherries.
  10. Bake for 25-30 minutes until a toothpick comes out with a few gooey crumbs.
  11. Cool for 10-15 minutes before slicing into squares.

Notes

Serve warm with a scoop of vanilla ice cream for an extra treat!
