Strawberry White Chocolate Chip Coffee Cake Muffins

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 cup fresh strawberries, diced
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your muffin pan with liners or non-stick spray.
  3. Mix the dry ingredients in a large bowl.
  4. Cream the softened butter and sugars until fluffy.
  5. Add the eggs one at a time, mixing well after each.
  6. Incorporate the vanilla extract.
  7. Mix in the sour cream until combined.
  8. Combine the wet and dry mixtures gently until just combined.
  9. Fold in the diced strawberries and white chocolate chips.
  10. Fill the muffin cups about 2/3 full.
  11. Bake for 18-22 minutes or until a toothpick comes out clean.
  12. Cool before serving.

Notes

Great served warm with a sprinkle of powdered sugar or a light glaze.
