Ground Beef Casserole with Potatoes

A comforting ground beef casserole layered with creamy potatoes and topped with cheese, perfect for family gatherings.

  • 1 pound ground beef (85% lean)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon fine sea salt
  • ¼ teaspoon fresh ground black pepper
  • 10 ½ ounces cream of mushroom soup (1 can)
  • 1 cup sour cream
  • 1 cup beef broth (low sodium)
  • 32 ounces frozen diced hash brown potatoes (thawed, 1 bag)
  • 2 cups shredded cheddar cheese (divided)
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh parsley
  • ½ cup Panko breadcrumbs
  • 2 tablespoons unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef in a large skillet over medium heat until browned, about 5-7 minutes. Drain excess fat.
  3. Add the diced onion and minced garlic, cooking until the onion is soft, about 3-4 minutes.
  4. Stir in the dried thyme, smoked paprika, sea salt, and black pepper; cook for another minute.
  5. Combine the cream of mushroom soup, sour cream, and beef broth in a bowl until well mixed.
  6. Fold in the thawed hash browns until well-coated.
  7. Stir in one cup of cheddar cheese.
  8. Spread the mixture into a greased 9×13-inch baking dish.
  9. Prepare the topping by mixing remaining cheddar cheese, Parmesan cheese, Panko breadcrumbs, and melted butter.
  10. Spread topping evenly over the casserole and bake for about 30-35 minutes, or until golden brown.
  11. Garnish with chopped parsley before serving.

Notes

For a healthier version, substitute with ground turkey and use Greek yogurt instead of sour cream.
