Cheesy Ground Beef and Rice Casserole

A comforting and cheesy ground beef and rice casserole that’s perfect for busy weeknights and family gatherings.

Ingredients

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Brown the meat in a large skillet over medium heat until no longer pink, about 6-8 minutes.
  3. Add the diced onion and minced garlic, sauté for 2-3 minutes.
  4. Mix the cooked beef, rice, cream of mushroom soup, milk or beef broth, 1 cup of shredded cheese, paprika, salt, and pepper in a large bowl.
  5. Transfer the mixture to a greased 9×13 inch baking dish.
  6. Top with the remaining 1 cup of shredded cheese.
  7. Bake covered with aluminum foil for 25 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  8. Cool for a few minutes and garnish with parsley.

Notes

Feel free to vary the ingredients with ground turkey for a leaner option or add veggies for extra nutrition.
