Wholesome Chicken Wild Rice Bowl

Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Wild rice (or brown rice/quinoa)
  • Button mushrooms (or shiitake/cremini)
  • Fresh spinach (or kale/Swiss chard)
  • Yellow or white onion
  • Garlic, minced
  • Olive oil (or avocado oil/butter)
  • Broth (chicken or vegetable)
  • Salt & pepper
  • Lemon juice (or lime juice/apple cider vinegar)

Instructions

  1. Prepare the wild rice by rinsing it under cold water, then combine with broth in a saucepan and simmer for 40-45 minutes.
  2. Cook the chicken in a skillet with olive oil for 6-8 minutes per side until golden.
  3. Sauté the diced onion and minced garlic in the same skillet for 2 minutes until fragrant, then add mushrooms and cook for 5-7 minutes.
  4. Add spinach and cook until wilted, about 2 minutes.
  5. Combine the cooked wild rice, sautéed veggies, and sliced chicken in a bowl, drizzling with lemon juice before tossing together.
