Creamy Squash Casserole

A comforting and creamy squash casserole loaded with flavor, perfect for cozy nights or festive gatherings.

  • 2 medium yellow squash, sliced
  • 1 medium onion, chopped
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup sour cream
  • 1 can cream of mushroom soup
  • 2 cups Ritz crackers, crushed
  • 1/2 cup butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the yellow squash and onion by slicing and chopping them, respectively.
  3. Mix the sliced squash, chopped onion, sharp cheddar cheese, sour cream, and cream of mushroom soup in a large bowl.
  4. Season with salt and pepper to taste.
  5. Prepare the topping by combining crushed Ritz crackers with melted butter.
  6. Layer the creamy squash mixture in a greased 9×13-inch baking dish and top with the buttery cracker mix.
  7. Bake for about 30-35 minutes or until golden brown.
  8. Cool for 5-10 minutes before serving.
