  • 1 pound Lean Ground Beef
  • 1 Yellow Onion
  • 1 Red Bell Pepper
  • 1 Green Bell Pepper
  • 2 cloves Garlic
  • 1 tablespoon Italian or Cajun Seasoning
  • 1 tablespoon Worcestershire Sauce
  • Salt and Ground Black Pepper (to taste)
  • 1 14.5-ounce can Canned Diced Tomatoes (with juices)
  • 1 cup Long Grain White Rice
  • 2 cups Beef Broth
  • 2 cups Shredded Cheese
  • Parsley (optional for garnish)

Instructions

  1. Heat your olive oil in a large skillet or Dutch oven over medium-high heat. Add your chopped onions and cook for about 2-3 minutes, until they become translucent.
  2. Toss in your minced garlic and cook for an additional 30 seconds until fragrant.
  3. Add the ground beef and break it up with a wooden spoon. Cook until browned, which should take 5-7 minutes. Drain excess fat if needed.
  4. Toss in the diced red and green bell peppers, Italian seasoning, Worcestershire sauce, salt, and pepper. Cook for about 4-5 minutes.
  5. Stir in the canned diced tomatoes—juices and all—and the long grain white rice. Pour in the beef broth and give it all a good stir to combine. Bring it to a boil.
  6. Reduce the heat to low, cover, and let it simmer for 20-25 minutes, or until the rice is cooked.
  7. Once the rice is tender, uncover the pot and sprinkle the shredded cheese evenly over the top. Cover again and let it cook for an additional 5 minutes.
  8. Once the cheese is gooey and golden, give a quick stir to incorporate it into the casserole.
