Crispy Loaded Breakfast Hash

A delicious and indulgent breakfast hash featuring crispy potatoes, smoky bacon, bubbling cheddar cheese, fresh herbs, and sunny-side-up eggs.

Ingredients

  • 4 cups diced russet potatoes
  • 6 slices bacon
  • 1 cup shredded cheddar cheese
  • 1 cup fresh herbs (parsley or green onions)
  • 2 tablespoons oil (bacon fat or olive oil)
  • 2 large sunny-side-up eggs
  • Hot sauce (to taste)

Instructions

  1. Start by dicing the potatoes into bite-sized pieces and soaking them to remove excess starch.
  2. Dice the bacon into small pieces and cook in a skillet over medium heat until crispy.
  3. Remove the bacon and sauté the diced potatoes in the remaining bacon fat until golden brown and crispy.
  4. Flip the potatoes occasionally until cooked through and crispy.
  5. Add the crispy bacon back into the skillet with the potatoes and stir in the shredded cheese until melted.
  6. Fry sunny-side-up eggs in a separate skillet to your desired doneness.
  7. Serve the hash on plates topped with sunny-side-up eggs, fresh herbs, and a drizzle of hot sauce.
