Parmesan Baked Yellow Squash

A vibrant and flavorful dish made with yellow squash and topped with bubbly Parmesan cheese.

  • 2 medium yellow squashes
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian herbs (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the squashes thoroughly. Cut off both ends and slice them into about ¼ inch thick circles.
  3. Toss the squash slices with olive oil, garlic powder, salt, and pepper in a large bowl.
  4. Grease a baking dish with a splash of olive oil and layer the squash neatly in the dish.
  5. Sprinkle half of the grated Parmesan cheese over the squash layer.
  6. Repeat layering with any remaining squash and top with the rest of the cheese.
  7. Bake for 25-30 minutes, or until the squash is tender and the cheese is golden and bubbly.
  8. Cool for about 5 minutes before serving.

Notes

Garnish with fresh parsley for added flavor and serve as a side dish or light lunch.
