Caramelized Brown Sugar Roasted Butternut Squash

A delicious and visually stunning dish featuring tender, caramelized butternut squash that’s sweet and savory.

  • 1 medium butternut squash
  • 2 tablespoons brown sugar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cinnamon
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Carefully cut your butternut squash in half lengthwise and scoop out the seeds.
  3. Dice the squash into 1-inch cubes.
  4. Drizzle olive oil over the squash cubes and add brown sugar, salt, black pepper, and cinnamon; toss to combine.
  5. Grab a baking sheet and spread the seasoned squash in a single layer.
  6. Slide the baking sheet into the oven and roast for 25–30 minutes, stirring halfway through.
  7. Check for tenderness and caramelization, broiling for a minute if desired.
  8. Once roasted, let cool slightly before serving.
