Homemade Chicken Soup

A warm and comforting homemade chicken soup, perfect for chilly days and family gatherings.

Ingredients

  • 2 chicken breasts, poached
  • 4 cups chicken broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh herbs (parsley or dill) for garnish

Instructions

  1. Poach the chicken breasts in water until cooked through, approximately 15-20 minutes. Allow to cool, then shred.
  2. Sauté the chopped onion and minced garlic in olive oil until fragrant, about 2-3 minutes.
  3. Add the diced carrots and celery, cooking for an additional 3-5 minutes.
  4. Combine the chicken broth, dried thyme, and oregano, bringing to a gentle boil before reducing the heat to simmer for 20 minutes.
  5. Shred the poached chicken and add to the pot, simmering for an extra 5 minutes.
  6. Season to taste with salt and pepper.
  7. Serve the soup in warm bowls, garnished with fresh herbs.

Notes
