Cajun Potato Soup

A hearty and creamy Cajun potato soup featuring smoky andouille sausage and seasoned potatoes, perfect for warming your soul on a chilly evening.

  • 1 lb Andouille Sausage, sliced
  • 34 Yukon Gold Potatoes, chopped
  • 1 cup Onions, chopped
  • 1 cup Celery, chopped
  • 1 cup Bell Peppers, chopped
  • 2 tbsp Cajun Spices (paprika, cayenne, garlic powder, oregano)
  • 1 cup Heavy Cream
  • 1 cup Cheddar Cheese, shredded
  • 4 cups Chicken or Vegetable Broth
  • Salt and Pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot or Dutch oven, heat olive oil and sauté onions, celery, and bell peppers for 5-7 minutes until soft.
  2. Brown the sausage: Add sliced sausage to the pot and cook until browned, about 5-6 minutes.
  3. Add the potatoes and spices: Stir in chopped potatoes and sprinkle Cajun spices over everything, mixing well.
  4. Pour in the broth: Cover all ingredients with broth and bring to a simmer. Reduce heat, cover, and cook for 20-25 minutes until potatoes are tender.
  5. Add cream and cheese: Pour in heavy cream and mix in cheddar cheese until melted and well combined.
  6. Serve it up: Ladle the soup into bowls and garnish with extra cheese and green onions, if desired.
