A comforting bowl of Broccoli Cheddar Soup that is rich, creamy, and packed with flavors.

  • 4 cups fresh broccoli florets
  • 2 cups sharp cheddar cheese, shredded
  • 2 medium carrots, diced
  • 1 cup cream (or whole milk)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • Salt and pepper, to taste

Instructions

  1. Prep Your Veggies: Start by washing and chopping your broccoli into bite-sized pieces. Peel and dice the carrots, and chop the onion and garlic.
  2. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Toss in the chopped onions and garlic, stirring until translucent and fragrant, about 3-5 minutes.
  3. Add the Carrots and Broccoli: Add your diced carrots and broccoli florets to the pot and stir for a couple of minutes.
  4. Pour in the Broth: Add your vegetable or chicken broth, ensuring the veggies are covered.
  5. Bring to a Boil: Increase the heat until the soup comes to a gentle boil, then reduce heat to low and cover, letting it simmer for about 15 minutes.
  6. Add the Cream and Cheese: Stir in your cream and gradually add the cheddar cheese, stirring until melted.
  7. Season to Taste: Taste your soup and season with salt and pepper as needed.
  8. Blend (Optional): For a smoother texture, blend the soup using an immersion blender.
  9. Serve: Ladle the soup into bowls and serve warm.

Notes

For a chunkier texture, leave some broccoli florets unblended.
