2 cups sharp cheddar cheese, shredded
2 medium carrots, diced
1 cup cream (or whole milk)
1 medium onion, chopped
2 cloves garlic, minced
4 cups vegetable or chicken broth

Instructions
Prep Your Veggies: Start by washing and chopping your broccoli into bite-sized pieces. Peel and dice the carrots, and chop the onion and garlic.
Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Toss in the chopped onions and garlic, stirring until translucent and fragrant, about 3-5 minutes.
Add the Carrots and Broccoli: Add your diced carrots and broccoli florets to the pot and stir for a couple of minutes.
