Creamy Cowboy Soup

A cozy and creamy soup packed with rich flavors, perfect for chilly evenings.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 4 cups beef broth
  • 4 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons chopped parsley or green onions

Instructions

  1. Sear the ground beef in olive oil until browned, about 5-7 minutes.
  2. Add the chopped onion and garlic; cook for another 3-4 minutes until fragrant.
  3. Toss in the diced potatoes, kidney beans, corn, and diced tomatoes.
  4. Pour in the beef broth and bring to a boil, then reduce to a simmer.
  5. Spice it up with smoked paprika, chili powder, cumin, salt, and pepper; stir well.
  6. Cream it up by adding softened cream cheese and blend until incorporated.
  7. Finish with heavy cream and shredded cheddar cheese; stir until melted.
  8. Plate up the soup and garnish with parsley or green onions.

Notes

Serve with crusty bread or cornbread for a cozy meal.
