One-Pot Creamy Spicy Cajun Sausage Pasta

  • 1 lb smoked sausage (andouille, kielbasa, or chicken sausage)
  • 12 oz penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese for garnish
  • 2 tbsp olive oil

Instructions

  1. Sauté the sausage in olive oil over medium heat until golden brown (about 5-7 minutes).
  2. Add the diced onion and bell pepper, cooking until softened (around 5 minutes).
  3. Toss in the minced garlic and cook for an additional minute until aromatic.
  4. Pour in the chicken broth, heavy cream, diced tomatoes, Cajun seasoning, paprika, and season with salt and pepper.
  5. Add the penne pasta, ensuring it’s coated in the sauce; bring to a gentle simmer and cover for 12-15 minutes.
  6. Finish by stirring in the grated Parmesan cheese until melted, and adjust seasoning to taste.
  7. Plate and serve hot, garnished with extra Parmesan and fresh herbs if desired.
