  • 2 bone-in, skinless chicken thighs
  • 1/2 pound smoked sausage (Andouille or Kielbasa)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 4 cups chicken broth
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Gather your army: First things first, set your cooking station. Gather all the ingredients and tools.
  2. Sauté time: In a large pot, heat the olive oil over medium heat. Add the sliced smoked sausage and sauté for 3-4 minutes until golden brown.
  3. Onion and garlic: Toss in the diced onion and cook until translucent (about 5-6 minutes). Add the minced garlic and cook for another minute.
  4. Chicken in: Nestle those thighs into the mix, skin-side up. Sear for about 2-3 minutes on each side.
  5. Season it up: Sprinkle in the paprika, ground turmeric, dried thyme, cayenne pepper, and a pinch of salt and pepper. Stir and let it smile for a minute!
  6. Rice and broth: Pour in the rice and chicken broth, give it a stir, and bring to a gentle boil.
  7. Simmer like a pro: Once boiling, reduce heat to low and cover the pot. Let it simmer for 25-30 minutes until the rice is cooked.
  8. A moment of patience: Once time is up, turn off the heat and let it rest with the lid on for 5-10 minutes.
  9. Shred and serve: Carefully remove the chicken thighs, shred them, and return the meat to the pot. Stir everything together.
