Oreo Stuffed Chocolate Chip Cookies

  • 1 cup unsalted butter (softened)
  • ½ cup granulated sugar
  • 1 cup brown sugar (packed)
  • 2 large eggs (room temperature)
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1½ cups semisweet chocolate chips (divided)
  • 20 Oreo Cookies (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs, one at a time, then mix in the vanilla extract.
  4. Sift together the flour, cornstarch, baking soda, baking powder, and salt, then gradually add to the wet ingredients.
  5. Fold in 1 cup of chocolate chips.
  6. Scoop about 2 tablespoons of cookie dough, flatten it slightly, and place an Oreo in the center, then cover it with more dough and seal.
  7. Chill the cookie dough balls in the fridge for about 30 minutes (optional).
  8. Arrange the stuffed cookies on the baking sheet and press remaining chocolate chips on top.
  9. Bake for 10-12 minutes or until golden brown around the edges.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
