Oven Roasted Butternut Squash

  • 2 tablespoons Olive Oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the squash by cutting it in half lengthwise.
  3. Scoop out the seeds and stringy bits.
  4. Peel the squash using a vegetable peeler and cut into 1-inch cubes.
  5. Season the cubed squash with olive oil, salt, pepper, and any herbs.
  6. Spread the squash on a baking sheet lined with parchment paper.
  7. Roast for 25-30 minutes, turning halfway through.
