Pav Bhaji

A delicious and vibrant Indian street food, Pav Bhaji is a spiced mash of vegetables served with buttery toasted bread, bringing comfort and nostalgia in every bite.

  • 7 cloves Garlic (Big, around 30 grams)
  • 2 tbsp Red Kashmiri Chili Powder
  • 2 cups Potatoes (around 250 grams, peeled and cut into cubes)
  • 1 cup Cauliflower florets
  • 2 cups Finely chopped Tomatoes
  • 1 cup Finely chopped Onion
  • 1 cup Finely chopped Capsicum/Bell Pepper
  • 1/4 cup dried Green Peas
  • Salt (to taste)
  • 1/2 tsp Turmeric powder
  • 1 tbsp + 1/2 tsp Pav Bhaji Masala
  • 1/4 cup finely chopped Cilantro
  • 2 tbsp Butter
  • 1 tbsp Oil
  • 1 tsp Kasuri Methi
  • 2 tsp Lime juice

Instructions

  1. Prepare the Vegetables: Boil diced potatoes and cauliflower in salted water until fork-tender (about 15 minutes).
  2. Sauté the Bases: Heat oil and 1 tablespoon of butter in a pan, add onions and cook until golden brown (about 7-10 minutes).
  3. Add Garlic and Spices: Stir in minced garlic, Kashmiri chili powder, turmeric, and Pav Bhaji masala, and cook for 2 minutes.
  4. Incorporate the Tomatoes: Stir in chopped tomatoes and cook down until soft (about 10 minutes).
  5. Mash the Veggies: Drain the cooked vegetables and mash them into the pan, adding lime juice, kasuri methi, and remaining butter.
  6. Final Touches: Fold in cilantro and green peas, and simmer for 5-7 minutes. Adjust seasoning as needed.

Notes

Serve with soft, buttery pav and lime wedges for a flavor boost. Leftovers can be stored in the fridge for up to 3 days or frozen for up to 3 months.
