A luscious peach compote that captures the essence of summer, perfect for pancakes, yogurt, or straight from the jar!

  • ¼ cup white granulated sugar
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornflour (optional)

Instructions

  1. Gather your ingredients: Ensure you have everything listed above.
  2. Prepare the peaches: Dice the peaches and toss them into a large saucepan.
  3. Add the sugar: Sprinkle the sugar over the peaches and stir gently.
  4. Incorporate the liquids: Pour in the water and lemon juice, then add cinnamon and vanilla extract.
  5. Cook it down: Place over medium heat and let it simmer for about 10-15 minutes.
  6. Thicken it up: If using cornflour, mix it with a tablespoon of water and add it to the compote.
  7. Taste test: Adjust sweetness as needed.
  8. Cool and store: Let it cool before transferring to a jar.
