Peach Cookies

Delightful cookies celebrating the sweet flavor of fresh peaches, perfect for summertime gatherings.

  • 2 1/8 cups all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 2 large ripe peaches (peeled, pitted, and cut into 1/4-inch pieces—about 1 to 1 1/2 cups)
  • 1/3 cup peach preserves
  • 3 tablespoons sanding sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a medium bowl, combine flour, salt, baking soda, and cinnamon; whisk together.
  4. Cream the butter, granulated sugar, and brown sugar until fluffy, about 2-3 minutes.
  5. Add the egg and vanilla extract; beat until fully incorporated.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. Fold in the peaches and peach preserves gently.
  8. Scoop rounded portions of dough onto the prepared baking sheets, spacing them two inches apart.
  9. Sprinkle sanding sugar on top of each cookie.
  10. Bake for 10-12 minutes or until the edges are golden brown.
  11. Cool on baking sheets for 5 minutes before transferring to a wire rack.

Notes

These cookies can be served warm with a scoop of vanilla ice cream or whipped cream.
