Peach Pie Crumble Bars

A delightful dessert that combines juicy peaches with a buttery crust and a crunchy crumble topping, perfect for summer gatherings.

  • 3 cups chopped peaches (about 45 large peaches)

  • 3 tablespoons cornstarch
  • 3/4 cup flour
  • 1/4 cup large flake oats
  • 1/3 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/3 cup unsalted butter (melted)
  • 1 cup powdered sugar (for frosting)
  • 1/2 teaspoon vanilla extract
  • 45 tablespoons cream (or milk)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare an 8×8-inch (or 9×9-inch) baking dish with parchment paper.
  3. Make the crust by combining 1 1/4 cup flour, 1/2 cup powdered sugar, and 1/4 teaspoon salt. Add 2/3 cup melted butter and mix until it resembles wet sand.
  4. Press the mixture firmly into the prepared pan and bake for about 15 minutes or until lightly golden.
  5. Combine the chopped peaches, 1/4 cup granulated sugar, 2 tablespoons lemon juice, and 3 tablespoons cornstarch in another bowl.
  6. Pour the peach filling over the hot crust after it has baked.
  7. Prepare the crumble topping by mixing 3/4 cup flour, 1/4 cup oats, 1/3 cup brown sugar, and 1 teaspoon cinnamon. Add 1/3 cup melted butter and mix until crumbly.
  8. Top the peach filling with the crumble topping.
  9. Bake for 30-35 minutes until the topping is golden brown and fruit is bubbling.
  10. Cool in the pan on a wire rack before frosting.
  11. Whisk together 1 cup powdered sugar, 1/2 teaspoon vanilla extract, and 4-5 tablespoons cream until smooth.
  12. Drizzle the frosting over the cooled bars.
  13. Slice into squares and serve.
