Peach Pie Scones with a Vanilla Glaze

Delightfully flaky scones infused with the sweet, juicy flavors of peach pie and topped with a rich vanilla glaze.

  • 2 cups + 2 tbsp all-purpose flour
  • 1/3 cup brown sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cubed and cold
  • 1 egg
  • 1/4 cup heavy whipping cream, plus more for brushing
  • 1/4 cup sour cream
  • 2 tsp vanilla extract
  • 1/2 cup fresh peaches, diced
  • 1/2 cup powdered sugar (for the glaze)
  • 2 tsp vanilla extract (for the glaze)
  • 13 tbsp heavy whipping cream (for adjusting glaze consistency)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine dry ingredients: In a large bowl, whisk together flour, brown sugar, baking powder, and salt.
  3. Add in the cold cubed butter and cut into the flour mixture until it resembles coarse crumbs.
  4. Mix the wet ingredients: In a separate bowl, whisk together the egg, heavy cream, sour cream, and vanilla extract.
  5. Combine wet and dry: Make a well in the dry ingredients and pour in the wet mixture; gently mix until just combined and fold in diced peaches.
  6. Shape the dough onto a floured surface into a circle about 1-inch thick.
  7. Cut into 8 wedges and place on a parchment-lined baking sheet, brushing with heavy cream.
  8. Bake for 15-20 minutes or until golden brown.
  9. Prepare the glaze: Whisk together powdered sugar, vanilla extract, and 1 tbsp of heavy cream.
  10. Glaze the cooled scones after about 10 minutes.

Notes

Scones can be made ahead of time and stored in an airtight container for up to 2 days.
