Peach Vanilla Cheesecake Trifle

A delightful layered dessert featuring cream cheese, mascarpone, and fresh peaches, all wrapped in vanilla wafers.

  • 8 ounces cream cheese, softened
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar
  • 1/2 (8 ounces) container Cool Whip, thawed
  • 2 small boxes Jell-O instant vanilla pudding mix
  • 3 1/2 cups milk
  • 6 peaches, peeled and sliced
  • 1/3 cup sugar
  • 1 lemon, juiced
  • 1 (11 ounces) container vanilla wafer-style cookies, crushed

Instructions

  1. Prepare the cream mixture by beating together the cream cheese and mascarpone in a mixing bowl until smooth.
  2. Add the vanilla extract and sugar, and blend until combined.
  3. Fold in 1/2 of the thawed Cool Whip until well combined.
  4. Combine Jell-O instant vanilla pudding mix with 3 1/2 cups of milk in another bowl and whisk for about 2 minutes until thickened.
  5. Macerate the peaches by tossing them with 1/3 cup sugar and lemon juice in a separate bowl.
  6. Assemble the trifle by layering crushed vanilla wafers, cream mixture, peach mixture, and pudding in a trifle dish.
  7. Finish with Cool Whip on top and sprinkle with crushed vanilla wafers.
  8. Refrigerate for at least 2 hours, or overnight, to allow flavors to meld.
