Pineapple Upside Down Sugar Cookies

Delightful cookies that combine chewy sweetness with a hint of tropical pineapple, reminiscent of a childhood favorite.

  • 1 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract (optional)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can canned pineapple rings (well-drained)
  • 2 tablespoons additional sugar for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the butter and sugar together in a large mixing bowl until fluffy and light—about 2-3 minutes.
  3. Add the egg and vanilla extract, mixing well until fully combined.
  4. Mix the flour, baking soda, and salt in another bowl.
  5. Combine the dry ingredients with the wet mixture on low speed until just incorporated.
  6. Fold in the well-drained pineapple rings, breaking them into smaller pieces if desired.
  7. Scoop dough onto a parchment-lined baking sheet, leaving about 2 inches of space between each dough ball.
  8. Sprinkle sugar on top of each dough ball.
  9. Bake for 12-15 minutes until the edges are golden brown, but the centers remain soft.
  10. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

You can add shredded coconut, nuts, or chocolate chips for variations. Also, feel free to replace the pineapple with other fruits like peaches or berries.
