High-Protein Pumpkin Bread

  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 1 cup almond flour
  • 1/2 cup protein powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a loaf pan by greasing it or lining it with parchment paper.
  3. Mix the pumpkin puree, Greek yogurt, eggs, and honey (or maple syrup) in a large bowl until smooth.
  4. Combine the dry ingredients in another bowl: almond flour, protein powder, baking soda, baking powder, cinnamon, nutmeg, and salt.
  5. Fold the dry mixture into the wet mixture gently, avoiding overmixing.
  6. Pour the batter into the prepared loaf pan and level the top.
  7. Bake for 50-60 minutes, until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack.
