Pumpkin Banana Bread

  • 1 cup pumpkin puree
  • 1/2 cup butter, melted
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9 x 5-inch loaf pan by greasing it with butter or lining it with parchment paper.
  3. Mash the ripe bananas in a bowl until smooth, then add the pumpkin puree, melted butter, brown sugar, eggs, and vanilla extract; mix well.
  4. Whisk together the flour, baking soda, baking powder, pumpkin pie spice, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet mixture, folding gently until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the oven for 55-65 minutes until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Slice and enjoy warm or at room temperature.

Notes
