Homemade Pumpkin Donuts

  • ½ cup warm milk (between 95-105°F)
  • 1½ teaspoons active dry yeast
  • 3¼ cups all-purpose flour
  • ⅓ cup granulated sugar
  • ½ teaspoon salt
  • ½ teaspoon pumpkin spice
  • ⅔ cup pumpkin puree (not pumpkin pie mix)
  • 1 large egg
  • 3 tablespoons unsalted butter (softened)
  • ½ cup granulated sugar (for cinnamon-sugar coating)
  • ¾ teaspoon ground cinnamon
  • 4 ounces cream cheese (softened)
  • ¼ cup pumpkin puree (for glaze)
  • ½ teaspoon pumpkin spice (for glaze)
  • 1 teaspoon vanilla extract (optional)
  • 1 cup powdered sugar
  • 1 cup heavy cream (cold)

Instructions

  1. Activate the yeast by pouring warm milk into a small bowl, sprinkle the yeast on top, and let it sit for 5–10 minutes until frothy.
  2. Mix the dry ingredients in a large bowl: flour, sugar, salt, and pumpkin spice.
  3. Combine the wet ingredients in another bowl by whisking pumpkin puree, egg, and softened butter until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until a dough forms. Knead on a floured surface for about 5 minutes.
  5. Let the dough rise in a greased bowl covered with a towel for about 1 hour, until it doubles in size.
  6. Shape the donuts by rolling out the dough and cutting into donut shapes.
  7. Fry the donuts in hot oil at 375°F for 1–2 minutes on each side until golden brown.
  8. Prepare the glaze by beating softened cream cheese and pumpkin puree, then whisk in powdered sugar, pumpkin spice, and vanilla extract.
  9. Glaze the donuts after they’ve cooled slightly and let them sit on a cooling rack.

Notes

These donuts can be baked instead of fried at 375°F for about 12–15 minutes. Optional variations include chocolate chip or maple glaze.
