Pumpkin Hummus

A creamy and flavorful pumpkin hummus that combines savory chickpeas with the earthy sweetness of pumpkin, perfect for dipping or spreading.

  • 1 cup canned chickpeas (or soaked dried chickpeas)
  • 1 cup pumpkin puree
  • 1/4 cup tahini
  • 12 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 2 tablespoons olive oil
  • Smoked paprika, to taste
  • Fresh veggies (carrots, bell peppers, cucumbers) for serving

Instructions

  1. Prep the chickpeas: Rinse and soak dried chickpeas overnight, or drain and rinse canned chickpeas.
  2. Blend it up: In a food processor, combine chickpeas, pumpkin puree, tahini, minced garlic, lemon juice, cumin, and coriander.
  3. Season to taste: Blend, then add salt, black pepper, and smoked paprika to taste.
  4. Adjust consistency: Drizzle in olive oil while blending until smooth.
  5. Chill and set: Transfer to a bowl, cover, and refrigerate for at least 30 minutes.
  6. Garnish and serve: Drizzle with olive oil and sprinkle with paprika, and enjoy with veggies and pita chips.

Notes

For an ultra-smooth hummus, process chickpeas first before adding other ingredients. Feel free to experiment with spices or add toppings like roasted pumpkin seeds.
