Deliciously easy Raspberry No-Bake Cheesecake Bites that blend creamy cheesecake with fresh raspberries, perfect for any occasion.

  • 12 ounces (340 grams) fresh raspberries
  • 16 ounces (454 grams) cream cheese, softened
  • 8 ounces (227 grams) whipped topping
  • ⅓ cup (67 grams) granulated sugar
  • 1 ½ cups (180 grams) graham cracker crumbs
  • ½ cup (113 grams) melted butter

Instructions

  1. Combine graham cracker crumbs and melted butter in a bowl until moistened.
  2. Press the mixture into the bottom of a lined 9×9 inch pan.
  3. Beat the softened cream cheese in a large bowl until smooth.
  4. Mix in granulated sugar until combined.
  5. Fold in the whipped topping until uniform.
  6. Add chopped raspberries to the mixture and fold gently.
  7. Pour the cheesecake filling over the crust and smooth it out.
  8. Chill in the fridge for at least 240 minutes or until set.
  9. Cut into squares and serve with extra raspberries on top.

Notes

For a dairy-free version, you can substitute with vegan cream cheese and coconut whipped topping.
